The town is named for the oyster.
Blue Points and Peconic Bays come in three to four times a week from farms a few miles from the counter. On tide mornings the shipment is on ice by mid-morning. Everything arrives tagged, dated and traceable to the farm it came off.

Is your seafood fresh or frozen?
Day-boat where we can get it, never frozen, brought in head-on. We take what comes off the boat that morning. Cold-water lobster tails are the one deliberate exception — those are frozen at sea, which is what keeps the meat firm.
Where do the oysters and clams come from?
Local Long Island beds — Oyster Bay and the Great South Bay — three to four times a week, tagged and traceable to the farm. Cape Cod and PEI selections rotate in through the winter when local supply thins.
Can you source a specific fish for a dish?
Yes. With 48 hours' notice we can source a wide variety of fresh fish and seasonal seafood — whole fish for the grill, fish for crudo, head-on prawns. Call the counter and tell us the dish rather than the species; we will tell you what is worth buying that week.
Do you shuck oysters for a party?
We do, at pickup. Give us 24 hours for anything over five dozen so the shucking does not hold up the counter.
